Dissolve the yeast in water and rest for 10 mins.

Add flour, olive oil and salt into the water.

Knead into a dough and cover to rest 30 mins.

Stretch and fold the dough from four sides into the center. The dough should be smooth.

Coat with olive oil and cover.

Let rise at room temperature for 1 hour.

Refrigerate overnight for 12-20 hours.

Bring to room temperature for 30 mins before shaping.

Deflate the dough, form into a ball and cover.

Let rise until double in size (1.5-2 hours).

Shape the dough into pizza base.

Place on tray.

Oven preheat 250C.

Roll the dough to your desired thickness.

Start spreading the base (tomato).

Add cheese.

Add toppings.

Add cheese.

Fan bake for 12 mins.

Take out.

Cool down 3-5 mins.

Slice the pizza.
